Ingredients

  • 6 slices turkey bacon (or a halal alternative), chopped into 1-inch width
  • 1 small onion, chopped thinly
  • 1.5 to 2 pounds green beans, trimmed and chopped into 1-inch length
  • 1 pound potatoes, peeled and diced
  • 3 to 4 cups vegetable or chicken stock
  • 1/4 cup sour cream
  • 1 teaspoon savory, dried
  • Salt and pepper, to season

Method

  1. Place the chopped bacon into a cold, medium to large saucepan.
  2. Set the heat to medium-high.
  3. Fry the bacon pieces until they reach a perfect golden crispiness.
  4. Remove the crispy bacon from the pan, reserving the rendered fat.
  5. Add the thinly chopped onion to the rendered bacon fat.
  6. Sauté the onion until it turns translucent and soft.
  7. Scrape up any flavorful brown bits from the bottom of the pan.
  8. Add the chopped green beans to the pan.
  9. Add the diced potatoes to the pan.
  10. Add the dried savory to the pan.
  11. Add salt and pepper to season.
  12. Pour in 3 to 4 cups of vegetable or chicken stock.
  13. Bring the soup to a gentle boil.
  14. Lower the heat to a simmer.
  15. Cook until the green beans and potatoes are fork-tender.
  16. Transfer about one-third of the soup into a separate bowl.
  17. Use an immersion blender to puree this portion until smooth.
  18. Mix in the sour cream until fully combined.
  19. Return the pureed mixture to the main pan with the rest of the soup.
  20. Stir everything together until well combined.
  21. Taste the soup and adjust the seasonings as needed.
  22. Reheat for a few minutes over low heat.
  23. Avoid bringing the soup back to a boil after adding the sour cream.

Notes

Always start bacon in a cold pan for even crisping.
Taste and adjust seasoning frequently throughout the cooking process.
Blend only a portion of the soup for a creamy yet textured result.
Avoid boiling the soup after adding sour cream to prevent curdling.
