Ingredients
Method
- Prepare the gremolata.
- In a small mixing bowl, stir together the chopped fresh parsley, lemon zest, and one clove of minced garlic.
- Season the gremolata mixture with a pinch of kosher salt and freshly ground black pepper.
- Set the gremolata mixture aside to allow the flavors to marry.
- Heat the olive oil in a large cast-iron pot or Dutch oven over medium heat.
- Add the onion, carrots, celery, bay leaf, and the remaining three cloves of chopped garlic to the pot.
- Season the vegetables with salt and pepper.
- Sauté the vegetables until they become crisp-tender, about 3 to 4 minutes.
- Incorporate the tomato paste and ground coriander into the sautéed vegetables.
- Stir constantly until the tomato paste darkens and becomes fragrant, roughly 2 to 3 minutes.
- Pour in the vegetable stock.
- Add the rinsed quinoa to the pot.
- Bring the mixture to a gentle boil.
- Reduce the heat to a simmer.
- Cover partially and cook, stirring occasionally, until the quinoa is tender and cooked through, about 14 to 16 minutes.
- Stir in the broccolini.
- Stir in the cannellini beans.
- Continue cooking for another 3 to 4 minutes until the broccolini is tender.
- Serve your Hearty Vegetable Soup spooned generously over each portion.
- Top each serving with the prepared Parsley Gremolata.
Notes
Always rinse quinoa thoroughly to remove any bitter coating.
Don't rush sautéing the tomato paste; it develops deeper flavor.
Taste and adjust salt and pepper throughout the cooking process.
